Angelinas Food Diaries: Protein Pancakes

Some of the other recipes I have in this series are more centered on my Spanish culture, but today I want to show a different recipe that has a special place in my heart.

When I was in the seventh grade, I decided to go vegetarian. When I had that diet, I wasn’t getting enough protein in my system. Knowing this my mother started looking for and creating recipes that I would be willing to eat that would provide me with the protein and fiber that I needed. These protein pancakes as she calls them, were one of my favorites that I still enjoy today. So, if you need a little extra protein in your diet, or just looking for a new pancake recipe, try this one out.  

Ingredients: 

  • 1 cup all-purpose flour 
  • 2 tbsp sugar 
  • 1 tbsp sprouted chia seeds 
  • 2 tbsp baking powder 
  • ½ tsp salt 
  • 1 cup milk 
  • 2 tbsp unsalted melted butter 
  • 1 large egg 

Steps: 

  • In a bowl mix together the flour, sugar, salt, and baking powder 
  • In another bowl mix together the chia seeds, egg, milk, and melted butter  
  • While stirring, slowly mix the dry ingredients with the wet until everything is combined
  • Spread some butter on a pan then add about ½ cup of mixture to the pan when the pan is hot 
  • Cook both sides like you would a regular pancake until cooked through 
  • Repeat until you have no more mixture left 
  • Serve and Enjoy
