Angelina’s Food Diaries: Mangu

When I lived in New York, our average breakfast often consisted of salami, Mangu, and my grandmother’s oatmeal which you can find the recipe for in one of my previous articles.

Though Mangu is a simple dish, it can be enjoyed by the whole family at breakfast time. It is a dish with a consistency of mashed potatoes but very filling and satisfying with a different taste than your average American breakfast foods.  

 

Ingredients:  

  • Freshly Cut Plantains (the riper the less sweet)
  • Water 
  • Garlic Powder (to taste) 
  • Salt (to taste) 

Steps:  

  • Boil a pot of water 
  • Add plantains and boil until tender 
  • Take plantains out and mash 
  • Add teaspoon of butter 
  • Add water from the pot used for plantains 
  • Add pinch of garlic powder 
  • Add salt to taste
